Ingredients:
- ½ cup refrigerated prepared hummus
- 6 mini sweet peppers, tops trimmed and halved lengthwise
- 24 toothpicks
- 3 mini cucumbers, each cut crosswise into 16 (¼-inch-thick) slices
- 12 black olive slices
- 12 grape tomatoes
Directions:
- Transfer hummus to small zip-top plastic bag and snip bottom corner with kitchen scissors; fill pepper halves with hummus.
- Using 2 toothpicks, attach 4 cucumber slices to each pepper half to make “wheels;” place 1 olive slice and 1 tomato in each pepper half to make “steering wheel” and “driver.” Makes 12 cars.
